Apple Raisin Pudding Recipe
- 2 c. Short grain rice,cooked
- 1 c. Skim lowfat milk, Sweetener = 12 tsp sugar
- 1/4 c. Raisins,
- 1 tsp Vanilla,
- 1/4 tsp Cinnamon,
- 1/4 tsp Nutmeg,
- 1 x Apple,
- 1/4 tsp Ascorbic acid colour keeper
- In a saucepan, combine cooked rice, skim lowfat milk, sweetener, raisins, vanilla, cinnamon and nutmeg.
- Bring to a boil; reduce heat and simmer, stirring occasionally for five min or possibly till most of moisture evaporates and mix is creamy.
- Core and shred apple and sprinkle with ascorbic acid colour keeps.
- Stir apple into rice mix.
- Cooke for 2-3 min longer or possibly till apple is soft.
- Spoon into serving dish or possibly dessert dishes.
- Serve hot or possibly chilled.
- Makes 3 c. 1 serving = 1/2 c.; 1 starchy choice; 1 lowfat milk choice 22 g
