Buttermilk Biscuits
- vegetable cooking spray
- 2 cups self-rising flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 12 teaspoon sugar (optional)
- 12 cup white vegetable shortening, cut into small pieces
- 23 cup buttermilk
- melted butter, for brushing (optional)
- Preheat oven to 425.
- Lightly spray a large, heavy baking sheet.
- In a large mixing bowl, stir together the flour, baking powder, sugar(optional), and salt.
- Cut in shortening until mixture resembles fine crumbs.
- Make a well in center and pour in the buttermilk.
- Combine the buttermilk and flour mixture until a sticky dough forms.
- Turn dough on a floured surface and knead lightly 4-5 times, just blended.
- Roll out the dough about 1/2-inch thick.
- Using a floured 2-inch biscuit or cookie cutter, cut the dough into as many rounds as possible using a straight downward motion.
- Do not twist the cutter or the sides of the biscuits will not rise evenly.
- Place rounds on the baking sheet about 1 inch apart.
- If you want the biscuits with a very soft edge, place the close together on a baking sheet.
- Knead the dough trimmings together lightly, reroll, and cur out as before.
- Bake for 10-12 minutes or until golden brown.
- If you want brush the tops with a little melted butter and serve hot from the oven .
- Careful to keep an eye on them cooking times may very per stove.
