Quarkspeise

  1. Whisk the heavy cream and farmer's cheese together in a bowl.
  2. Add the confectioner's sugar and whisk until smooth.
  3. Beat the egg whites until stiff peaks form.
  4. Fold into the cheese mixture.
  5. Line a sieve with cheesecloth and place over a bowl.
  6. Spoon the cheese mixture into the sieve and spread evenly with the back of a spoon, making sure there are no air pockets.
  7. Fold the cheesecloth over the top.
  8. Refrigerate and drain overnight.
  9. Puree the raspberries and confectioner's sugar together in a blender.
  10. Rub through a fine sieve to remove the seeds.
  11. Turn the cheese mixture out onto a serving platter and remove the cheesecloth.
  12. Serve with the raspberry sauce and berries.
