Golden Squash Soup Recipe
- 1 sm. onion, minced
- 2 tbsp. butter
- 2 tbsp. flour
- 1/2 teaspoon salt
- Dash of pepper
- Dash of nutmeg
- 2 c. lowfat milk
- 1 c. broth
- 1 c. cooked, mashed winter squash
- 2 tbsp. minced parsley
- In 2 qt saucepan, cook onion in butter till tender, about 3 min.
- Blend in flour, salt, pepper, and nutmeg.
- Gradually stir in lowfat milk, broth, squash, and parsley.
- Cook and stir till mix comes to a boil.
- Serve immediately.
- Garnish with parsley and sprinkle with nutmeg, if you like.
- Makes 4 servings.
