Pineapple-Peach Salsa

• 1 c. fresh pineapple
• 1 firm-ripe peach or nectarine
• 1/2 c. red bell pepper
• 3 tbsp. Chopped fresh mint
• 1 shallot
• 2 tbsp. lime juice
• 1 tbsp. honey
