Citrus and Spiced Plum-Almond Cobbler
- 1/2 cup brown sugar firmly packed
- 2 tablespoons cornstarch
- 1/2 teaspoon cinnamon ground
- 2 1/2 pounds plums pitted and quartered
- 2 tablespoons lemon juice fresh
- 2 tablespoons butter, unsalted cut into bits
- 1 cup sugar
- 3/4 cup flour, all-purpose
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup almonds sliced
- 1 large eggs lightly beaten
- Add brown sugar, cornstarch, and cinnamon in a large bowl, stir until mix well.
- Add plums, lemon juice, and butter.
- Stir until well blended.
- Transfer into a shallow 3-quart glass baking dish.
- Preheat oven to 375F.
- Add sugar, flour, baking powder, salt, and 1/2 cup almonds in a food processor, process until almonds are finely ground
- Pour in egg and pulse until well blended.
- Place flour mixture over plum mixture evenly, pulling some plum wedges up for presentation.
- Sprinkle remaining 1/4 cup almonds evenly over cobbler.
- Bake cobbler for 40 to 45 minutes, until golden and bubbling.
- Remove from the oven and let cool on a wire rack.
- Serve warm, at room temperature or chilled.
