Country-Style Pork Medallions

  1. SAUTE onions & mushrooms in butter in large frypan until softened; set aside.
  2. Add apple rings to pan & saute until soft; set aside.
  3. SLICE pork crosswise into 1 1/2 in (4 cm) medallions; flatten slightly.
  4. Saute medallions in same frypan until cooked through.
  5. Set aside; keep warm.
  6. ADD cream cheese & cider to pan; heat until smooth.
  7. Stir in brandy & basil.
  8. ARRANGE apples, mushrooms, onions & pork on plate.
  9. Pour sauce over all.
  10. Serve immediately.
