Country-Style Pork Medallions
- 2 small onions, sliced in rings King Sooper's 1 lb For $0.99 thru 02/09
- 3/4 lb. small whole mushrooms
- 2 Tbsp. butter
- 2 red apples, cored & cut in rings Safeway 1 lb For $0.99 thru 02/09
- 2 pork tenderloins Safeway 1 lb For $3.99 thru 02/09
- 1 pkg (250 g) Philadelphia Brick Cream Cheese, cubed
- 1 cup apple cider
- 1/4 cup Calvados or brandy
- 1 tsp. dried basil leaves
- SAUTE onions & mushrooms in butter in large frypan until softened; set aside.
- Add apple rings to pan & saute until soft; set aside.
- SLICE pork crosswise into 1 1/2 in (4 cm) medallions; flatten slightly.
- Saute medallions in same frypan until cooked through.
- Set aside; keep warm.
- ADD cream cheese & cider to pan; heat until smooth.
- Stir in brandy & basil.
- ARRANGE apples, mushrooms, onions & pork on plate.
- Pour sauce over all.
- Serve immediately.
