Easy Shrimp Scampi
- 1 pound shrimp large, peeled & deveined, cut through back to halve
- 1/2 cup olive oil, extra-virgin
- 1 tablespoon butter, unsalted
- 4 cloves garlic large, minced
- 1 tablespoon lemon juice freshly squeezed
- 2 each italian plum (roma) tomatoes seeded and diced
- 2 tablespoons italian parsley finely chopped
- 1/2 teaspoon oregano dried, crushed
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper freshly cracked
- 1/2 pound angel hair pasta or linguine, hot, cooked
- Place the cleaned and halved shrimp in a bowl and add all remaining ingredients except the salt and pasta.
- Marinate in the refrigerator at least 2 hours and up to 4 hours, stirring the shrimp at least twice during the marinating.
- Remove shrimp in marinade from refrigerator and add the salt; toss.
- Heat large skillet over medium and add the shrimp with the marinade.
- Saute until shrimp turn pink; add the butter.
- Toss in the cooked pasta.
- Serve immediately.
