Chickpea and Quinoa Mediterranean Patties

  1. Preheat oven to 400 F.
  2. Cook quinoa as directed on package (my package said to bring 1 cup quinoa and 2.5 cups water to boil, reduce heat and simmer for 10-15 minutes or until all water is absorbed.)
  3. In a large bowl combine the cooked quinoa, eggs and mashed chickpeas.
  4. Add onion and chives.
  5. Add breadcrumbs, salt, cumin, garlic sesame seeds, cheeses and olive oil.
  6. Mix well and make sure mixture is moist.
  7. If not add more egg or water.
  8. If too moist add more breadcrumbs.
  9. Form mixture into small patties and place on a well-greased baking sheet.
  10. Bake in oven for 15-20 minutes or until tops are golden brown, then flip and cook additional 5 minutes.
  11. Serve in a pita with hummus, tabouli and tahini on top.
