Dried Figs

  1. Place figs in 1 quart of water in which salt has been dissolved.
  2. Let stand overnight.
  3. Drain.
  4. Make a syrup of the sugar and 1 pint water.
  5. Add figs and cook gently until the syrup is m ostly absorbed.
  6. While cooking, watch carefully!
  7. Do not stir, but lift kettle and shake figs.
  8. Put on plates and turn daily until dry.
  9. Pack in powdered sugar.
