Fruity Red Cabbage
- 1 lb red cabbage, shredded
- 1 onion, thinly sliced
- 1 eating apple, peeled, cored & sliced
- 2 ounces sultanas
- salt
- fresh ground black pepper
- 2 tablespoons water
- 2 tablespoons vinegar
- Layer the cabbage, onion, apple and sultanas in an ovenproof dish.
- Seasoning each layer with salt and pepper.
- Mix the vinegar and water together and sprinkle over.
- Cover with a piece of greasproof paper then the lid.
- Bake in a preheated oven at 350F/180C (160C fan oven) for 90 minutes until tender.
- Stir well before serving.
- Can be cooked at higher temperature for shorter time or lower temperature for longer time - depening on what else you are cooking at the same time.
