Shredded Pork on Cheesy Masa Boats

  1. Blend juice and annatto paste in blender until smooth.
  2. Heat dressing in medium skillet on medium-high heat.
  3. Add half the onions; cook and stir 3 min.
  4. Stir in meat; cook 5 min., stirring occasionally.
  5. Add juice mixture and zest; cook on medium-low heat 10 min.
  6. or until liquid is absorbed, stirring occasionally.
  7. Meanwhile, heat griddle on medium heat.
  8. Shape masa into 12 balls; flatten slightly.
  9. Place 1 Tbsp.
  10. cheese in center of each ball; fold in sides of dough to completely cover cheese.
  11. Roll balls into cylinders.
  12. Place 1 cylinder between 2 pieces of plastic wrap; press gently with tortilla presser to form 4-inch oval "boat."
  13. Repeat with remaining balls.
  14. Cook masa boats on griddle 2 min.
  15. on each side or until puffed.
  16. Top masa boats with meat mixture, remaining onions and cilantro.
