Curry Chicken

  1. Chop the ends of the drumstick (optional)
  2. In a food processor combine olive oil, onion rough chopped, habanero or scotch bonnet pepper, fresh cilantro, curry powder, garlic cloves, peeled ginger.
  3. Pour curry marinade over chicken and massage so every piece gets flavor.
  4. Let sit in fridge for about an hour.
  5. In a nice size pan or pot.
  6. Pour 2 tbsp olive oil and sear the chicken til brown on all sides.
  7. Add fresh chopped cilantro and water.
  8. Let simmer for 45 mins.
  9. If sauce gets dry add a little more water.
