Chicken with Balsamic Vinegar
- 2 tbsp EVOO
- 1 cup onion, finely chopped
- 2 clove garlic, minced
- 1 1/4 lb boneless skinless chicken breasts
- 1 tbsp balsamic vinegar
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1/4 cup chopped fresh basil
- Heat oil in heavy large skillet over medium-high heat.
- Add onion and garlic and saute until just tender, about 4 minutes.
- Add chicken and cook until chicken is brown, about 4 minutes.
- Stir in vinegars and mustard.
- Turn breasts if you kept them whole, and continue cooking until chicken is tender and cooked through.
- Season with salt and pepper and sprinkle with basil.
