Peruvian Skewered Steak (Anticuchos)
- 2 lb. sirloin steak, cut in 1-inch cubes
- 1-1/2 tsp. salt
- 1/2 tsp. dried ground chili peppers
- 6 peppercorns
- 1/4 tsp. saffron
- 3 cloves garlic, minced
- 1 cup wine vinegar
- 1/2 cup water
- 1/4 cup olive oil
- Trim the fat from the meat.
- In a bowl, mix together the salt, chili peppers, peppercorns, saffron, garlic, vinegar, and water.
- Add the meat and marinate overnight in the refrigerator.
- Drain the meat; reserve the marinade.
- Thread the meat on 4-6 skewers; brush with the olive oil.
- Broil as close to the heat as possible 6 minutes, or to desired degree of rareness, turning and basting frequently with the marinade.
