Peruvian Skewered Steak (Anticuchos)

  1. Trim the fat from the meat.
  2. In a bowl, mix together the salt, chili peppers, peppercorns, saffron, garlic, vinegar, and water.
  3. Add the meat and marinate overnight in the refrigerator.
  4. Drain the meat; reserve the marinade.
  5. Thread the meat on 4-6 skewers; brush with the olive oil.
  6. Broil as close to the heat as possible 6 minutes, or to desired degree of rareness, turning and basting frequently with the marinade.
  7. Serves 4-6.
