Curried Lima Bean Casserole
- 1 pkg. frozen or canned baby limas
- 2 medium onions, chopped
- 1 red pepper, chopped
- 1 can cream of mushroom soup
- 1/2 c. bean juice and water (mix together)
- 1 c. sour cream
- 1 1/2 tsp. curry powder
- 1/2 c. croutons, crushed
- 1 Tbsp. melted butter
- 2 strips bacon, fried crisp and crumbled
- Cook limas as directed.
- Drain and save liquid.
- Combine onion, red pepper, soup and water in saucepan.
- Heat thoroughly. Remove from heat; blend sour cream and curry powder into soup mixture.
- Stir in limas.
- Turn mixture into 2-quart casserole dish.
- Combine crumbs with melted butter.
- Add crumbled bacon. Sprinkle over mixture.
- Bake uncovered at 350u0b0 for 25 minutes or until lightly browned.
