Ham & Apple Panini With Apricot Mayo

  1. Combine mayonnaise and apricot preserves in bowl.
  2. Spread each slice of bread with 1/2 tablespoon mayonnaise mixture.
  3. For each sandwich, layer 1 bread slice, mayonnaise-side up, with 1/2 slice cheese, 1/4 ham, 1/4 onion, 2 slices apple, 1 slice pickle and 1/2 slice cheese.
  4. Top with another bread slice, mayonnaise-side down.
  5. Evenly spread butter over outside of bread slices.
  6. Cook 2-3 minutes or according to panini grill instructions.
  7. Pan Grilling Instructions: Heat 12-inch skillet on medium heat.
  8. Place sandwiches in skillet.
  9. Cook, turning once, 2-3 minutes or until bread is golden brown and cheese is melted.
