Fresh Cold Tomato Pasta
- 4 cups Tomatoes (peeled And Diced)
- 1 whole Sweet Onion
- 2 cloves Garlic
- 1/2 cups Chopped Basil
- 1 cup Chopped Fresh Parsley
- 5 whole Lemons
- 1 Tablespoon Olive Oil
- 2 teaspoons Salt
- 1 dash Pepper
- 1 package Pasta
- Mozzarella And Parmesan Cheese
- Blanch and peel tomatoes.
- Chop finely or process in a food processor to 1/4-inch pieces.
- Chop onion, garlic, basil and parsley in the food processor or by hand.
- Add to tomatoes, including the juice.
- Squeeze lemons; add lemon juice, olive oil, salt and pepper.
- Proportions of all ingredients can be adjusted to taste.
- Serve at room tempature or cold over hot pasta.
- Garnish with cheese.
