Fresh Cold Tomato Pasta

  1. Blanch and peel tomatoes.
  2. Chop finely or process in a food processor to 1/4-inch pieces.
  3. Chop onion, garlic, basil and parsley in the food processor or by hand.
  4. Add to tomatoes, including the juice.
  5. Squeeze lemons; add lemon juice, olive oil, salt and pepper.
  6. Proportions of all ingredients can be adjusted to taste.
  7. Serve at room tempature or cold over hot pasta.
  8. Garnish with cheese.
