Tuna Salad With Chilli Basil Pesto
- 4 tuna steaks
- olive oil
- salt & freshly ground black pepper
- 80 g fresh rocket
- 80 g fresh spinach leaves
- 4 tomatoes, cut into wedges
- 1 garlic clove, crushed
- 12 cup shaved parmesan cheese (optional)
- 2 red chilies, deseeded and chopped
- 13 cup pine nuts
- 1 12 cups fresh basil
- 12 cup olive oil
- salt and pepper
- To make pesto:.
- Place chilli, garlic, parmesan, pine nuts and basil in processor, process until combined.
- Slowly add olive oil until pureed.
- Transfer to bowl and season.
- Set aside.
- To cook tuna:.
- Brush with oil and season.
- Grill to you liking.
- Cut tuna into chunks, add to other salad ingredients, season and top with pesto.
- Serve immediately.
