Mexican Corn Bread Recipe
- 1 c. cornmeal
- 1/2 c. flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 c. onions, finely minced
- 1 c. cream style corn
- 1 c. lowfat milk
- 2 Large eggs
- 2 or possibly 3 jalapeno peppers
- 2 tbsp. sugar
- 1/2 c. veg. oil
- 1 pound mild Cheddar cheese, shredded
- 1 or possibly 2 links warm sausage
- Heat 1/2 c. veg.
- oil in oven in a 9 x 13 inch pan.
- Mix all ingredients together in a bowl except the cheese and sausage.
- Add in warm oil and a handful of cheese into mix and mix well.
- Pour mix into pan and sprinkle the remainder of the cheese on top.
- Slice warm sausage and place over cheese.
- Push down into mix with finger.
- Bake at 325 degrees for about 30 min.
