Lakeside Potato Hash
- 7 large potatoes, chopped (do not peel)
- 1 green bell pepper, diced
- 1 medium red onion, diced
- 4 ears corn
- 12 cup olive oil
- 0.25 (6 ounce) jar steak seasoning (I use a local seasoning called regas, but I am sure any steak seasoning would work)
- 2 tablespoons ground pepper
- 0.5 (12 ounce) can beer (I prefer Miller High Life for this recipe)
- 2 cups cheddar cheese (shredded)
- sour cream
- Heat oven to 500 degrees.
- Cut corn kernels off of the cobs and put in a lage mixing bowl.
- Add the potatoes, onion, and belle pepper and mix until blended.
- Stir in the oil until everything is well coated and then add the pepper and steak seasoning.
- Pour into a greased 9x13 glass pan.
- Pour the beer over the top and cover with foil.
- Bake for about 30 minutes or until juices are bubbling.
- Remove foil and bake for another 30 minutes.
- Remove pan from oven and stir in cheese until melted then serve.
- Top with sour cream if you like.
