Baby Lima Beans with Onion
- 1 package frozen baby lima beans
- 2 tbsp. olive oil
- 2 medium celery stalk
- 1 small red onion
- 1 large garlic clove
- 1 tbsp. white wine vinegar
- tsp. fresh parsley leaves
- 1/4 tsp. salt
- .13 tsp. coarsely ground black pepper
- In 10-inch skillet, prepare frozen baby lima beans as label directs.
- Drain lima beans well and set aside.
- Wipe skillet dry.
- In same skillet, heat olive oil over medium heat.
- Add celery with leaves, onion, and garlic, and cook 10 minutes or until vegetables are tender, stirring occasionally.
- Add cooked lima beans, vinegar, parsley, salt, and pepper; heat through.
