Orange Chicken
- 1 1/2 lb skinless boneless chicken breasts, cubed
- 2 tbsp olive oil, extra virgin
- 1/4 cup soy sauce
- 1/4 cup cornstarch
- 3/4 cup Orange juice, I use almost 1 cup of pulp free
- 3 tbsp BBQ sauce, I use Sweet Baby Rays Honey BBQ
- 1 tbsp red pepper flakea
- 1 tbsp minced garlic
- Mix together cornstarch & soy sauce.
- Add chicken and stir well.
- Marinate for 10 minutes.
- Mix together the orange juice, red pepper flakes, garlic and BBQ sauce.
- This is your orange sauce.
- Heat the oil in a large skillet on med high.
- Remove the chicken from marinade with a slotted spoon and carefully add to the skillet.
- Cook on med high heat for 7-8 minutes or until cooked through.
- Add the orange sauce and mix well, coating all the chicken, cook for 20 minutes, Stirring constantly until sauce is thick.
- Serve with steamed or fried rice.
