Simple Chili

  1. In large pot, heat oil over medium heat.
  2. Saute onions, garlic, carrots and celery until slightly softened, 5 minutes.
  3. Drop meat into pot and break apart using a wooden spoon.
  4. Cook until meat is cooked thoroughly and browned.
  5. Stir in the remaining ingredients and bring to boil.
  6. Reduce heat to low and simmer at least 20 minutes but up to 3 hours.
  7. Top with desired ingredients (fresh tomatoes, avocados, lime juice, sour cream, cilantro, cheddar cheese, etc.)
  8. and serve with cornbread.
