Golden Hummus Soup

  1. Blend half of all non-garnish ingredients in blender.
  2. Blend until smooth (3 minutes).
  3. If soup is thick, add more stock 1 tablespoon at a time.
  4. Season to taste with salt and pepper.
  5. Transfer to large pot.
  6. Continue with remaining half ingredients to blend a second batch.
  7. Add to pot.
  8. Heat soup to a simmer over medium-low heat.
  9. Cook, stirring occasionally, 15 to 20 minutes.
  10. Serve in bowls and top each serving with 1 tablespoon of the pesto.
  11. Serve with healthy pita chips.
