Filipino Pancit
- 1/4 c. cooked chicken meat, cut in strips
- 1/2 c. cooked pork, cut in strips
- 1/2 c. cooked ham, cut in strips
- 1/2 c. shredded cabbage
- 1/4 c. shredded carrot
- 1/2 c. zucchini, cut in strips (or green beans)
- 2 segments garlic, crushed
- 1 Tbsp. soy sauce
- 1 medium onion
- 1 lb. rice sticks, soaked until soft, 20 minutes
- 3/4 c. chicken broth
- salt and pepper to taste
- Saute in oil the garlic and onion.
- Add pork, chicken and ham and saute 1 minute.
- Add carrot, zucchini and cabbage.
- Saute 5 minutes.
- Add softened rice sticks, soy sauce, chicken broth and salt and pepper.
- Mix well and cook another 10 to 15 minutes. Arrange in serving dish.
- Garnish with hard-cooked eggs.
