Funnel Cake
- 3 large eggs beaten
- 2 cups milk
- 4 cups flour, all-purpose sifted
- 13 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1 x lard for deep frying
- 1 x powdered sugar
- Beat eggs with milk and gradually beat in flour, sugar, salt, and baking powder.
- Beat until very smooth.
- Holding the opening of a funnel closed, fill the funnel with the batter.
- Open the end of the funnel and allow dough to run out in a stream into deep hot fat.
- Move the funnel to make a pattern, starting at the center of the pan and swirling batter outward in a circle.
- Fry for 2 or 3 minutes, or until brown.
- Drain on absorbent paper and sprinkle with confectioners sugar.
