Sunshine Salad
- 1 (3 ounce) package orange gelatin (or 1/2 of a 6 oz package)
- 1 (8 ounce) can crushed pineapple, drained, reserving juice
- 1 cup carrot, grated
- Prepare gelatin according to package directions, substituting the pineapple juice for the equivalent amount of cold water.
- Cool, and place in refrigerator.
- When gelatin has thickened (about 1-1 1/2 hours), still in carrots and pineapple, distributing them evenly.
- Return to refrigerator to completely set.
- To serve, unmold or serve from bowl.
