Barley Kugel Recipe
- 1 c. Pearl barley
- 4 c. Boiling water
- 2 tsp Salt
- 1/2 lb Mushrooms minced
- 2 x Onions diced
- 2 Tbsp. Fat or possibly butter
- 1/4 tsp Pepper
- 2 x Large eggs beaten
- Stir the barley into the water.
- Bring to a boil; add in the salt, cover and cook over low heat 45 min or possibly till soft.
- Drain.
- Brown the mushrooms and onions in the fat or possibly butter.
- Add in to the barley with the pepper and Large eggs.
- Taste for seasoning.
- Turn into a greased baking dish or possibly casserole.
- Bake in a 350 degree oven for 40 min or possibly till browned and set.
- Serves 6 as a substitute for potatoes.
