Mary Beth's Irish Soda Bread Recipe
- 4 c. flour
- 3 tbsp. sugar
- 1 tbsp. baking pwdr
- 2 teaspoon caraway seeds
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 c. shortening or possibly butter
- 1 1/2 c. golden brown raisins
- 2 egg whites
- 1 whole egg
- 1 1/2 c. buttermilk
- Preheat oven to 350 degrees.
- Grease and flour 9 x 2 inch round cake pan.
- In large bowl, combine first 6 ingredients.
- With pastry blender, cut in butter till mix resembles coarse crumbs.
- Stir in raisins.
- In small bowl, beat egg whites slightly - remove 1 Tbsp.
- and reserve.
- Add in whole egg to egg white mix and beat with wire whisk.
- Stir in buttermilk and beaten Large eggs into flour mix till flour is moistened.
- On well floured surface knead dough 8 to 10 strokes.
- Shape dough into ball.
- Place into cake pan - cut 4 inch cross across top - brush dough with reserved egg white.
- Bake bread 1 hour.
