Obie Green's Pork chops

  1. Preheat oven to 300 degrees (150 C.).
  2. Wipe chops; sprinkle with salt and pepper and coat with pancake flour.
  3. Brown chops on both sides and remove from skillet.
  4. Saute onions with salt, pepper and sugar until brown and tender.
  5. Stir in flour; stirring until well blended.
  6. Gradually add boiling water and cook until sauce thickens.
  7. Lay chops in a baking dish and pour sauce over; cover pan with foil.
  8. Bake in oven 90 minutes at 300 degrees (150 C.).
  9. Remove chops to serving platter.
  10. Strain gravy through seive, pressing onions through with wooden spoon.
  11. Serve each chop with a generous portion of sauce.
