  1. in a pan that has a lid with good fit heat pan add oil add chicken skin side down with half the spices sprinkle on chicken cover 5 minute turn chicken over add reast of spices
  2. every 5 minutes turn on third turn add anchote water 5 minutes turn add hoisin
  3. cook covered 20 minutes medium high heat covered
  4. remove chicken reserve whats in pan
