Bruschetta With Tomato Salsa Recipe

  1. Cut some of the bread into diagonal fingers.
  2. Preheat a ridged grill pan and when warm, toast the bread both sides.
  3. Brush with extra virgin olive oil and then rub with a garlic clove.
  4. Skin the tomatoes, and chop finely.
  5. Mix with the red onion, green pepper and spices.
  6. Season well.
  7. To serve spoon the salsa on top, then add in little cubes of goats cheese chevre.
