Cajun Cornmeal Mush (Couche Couche) Recipe
- 2 c. yellow cornmeal
- 1/4 c. oil
- 1 1/2 tsp salt
- 1 tsp baking pwdr
- 3/4 c. lowfat milk
- 3/4 c. water
- Heat the oil in a heavy pot.
- Mix the dry ingredients, then add in the lowfat milk and water.
- Pour the batter into the warm oil, and allow a crust to create on the bottom before stirring.
- Reduce heat to low and stir occasionally; cook for about 15 min.
- Serve in bowls with lowfat milk and sugar, like a warm cereal.
- This recipe yields 4 servings.
