Liz's Potato Cheese Soup
- 7 each potatoes diced
- 4 each carrots diced
- 3 tablespoons onions chopped
- 1 cup water
- 3 Stalks celery diced
- 1/4 cup butter
- 1/2 cup flour, all-purpose
- 2 cups milk
- 1 cup ham cubed
- 3/4 Bar velveeta cheese cubed
- 2 Cans chicken broth
- 1 cup broccoli florets
- 1 teaspoon parsley flakes
- Combine first 5 ingredients and cook until tender.
- Melt butter in a sauce pan, blend in flour and add milk slowly.
- Cook until thickening a little.
- Add milk mixture to hot vegetables, add ham, broccoli, cheese, broth and parsley.
- Cook until thickens.
- Stir constantly and don't boil.
