Oatmeal Blueberry Muffins
- 1 cup rolled oats
- 13 cup vegetable oil
- 1 each eggs
- 1 cup buttermilk
- 1/2 cup brown sugar packed
- 1 1/2 cup blueberries
- 1 cup flour, unbleached all-purpose
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves ground
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- Soak oats in milk until moisture is absorbed.
- Add salad oil, egg, brown sugar and blueberries and mix thoroughly.
- Mix together flour, soda, cinnamon, cloves, baking powder, salt, allspice and nutmeg and add to oat mixture.
- Mix thoroughly.
- Fill greased muffin cups 23 full.
- Bake in a 400F (200C) oven for 20 to 25 minutes until golden brown.
- Serve hot.
