Scalloped Corn Recipe
- 2 cans corn (1 whole kernel & 1 cream style)
- 1 box Jiffy corn bread or possibly muffin mix
- 2 Large eggs
- 1 stick butter
- 1 (8 ounce.) lowfat sour cream
- Mix together and pour into a 9 x 13 inch greased dish.
- Bake at 350 degrees for 45 min to 1 hour.
- Test for doneness by inserting knife blade in center, if it comes out clean, corn is done.
