Black Bean Soft Tacos
- 2 tsp. oil
- 1 small red onion, sliced
- 1 can (19 fl oz/540 mL) black beans, rinsed
- 1 cup frozen corn
- 2 plum tomatoes, chopped
- 1-1/2 tsp. each ground cumin and chili powder
- 8 corn tortillas (6 inch), warmed
- 1 cup Cracker Barrel Finely Shredded 3 Cheese Mexicana Cheese
- 3 Tbsp. chopped fresh cilantro
- 2 limes, each cut into 4 wedges Safeway 3 ct For $1.00 thru 02/09
- Heat oil in large skillet on medium-high heat.
- Add onions; cook and stir 2 min.
- Add beans, corn, tomatoes and seasonings; mix well.
- Cook 3 min., stirring frequently.
- Top tortillas with bean mixture, cheese and cilantro.
- Serve with lime wedges.
