Portuguese Soup Faial Style Recipe
- 1 can red kidney beans
- 2 1/2 quart. water
- 1 pound minced kale
- 6 med. size potatoes, cubed
- 2 fresh tomatoes, cut into quarters
- 1 med. onion, whole
- 1/2 pound linguica, cut into 1/2 inch rings
- 2 heaping tbsp. vegetable shortening
- 1 tbsp. salt of taste
- 1 teaspoon crushed pepper
- 1 tbsp. minced fennel (tuncho)
- Strain beans through food mill and add in to water.
- Place in a 4 to 6 qt pan and bring to a boil.
- Chop kale into small pcs and add in to water.
- Add in cubed potatoes, onion, Crisco, tomato and linguica, and allow to boil for about 25 min, before you shut off fire.
- Add in fennel.
- Makes 8 to 10 servings.
