Corn Muffins
- 2 c. white all-purpose flour
- 2 c. yellow cornmeal
- 2 tsp. baking soda
- 1/8 tsp. salt
- 2 eggs
- 2 c. buttermilk
- 1/2 c. honey
- 1/4 c. vegetable oil
- 1 medium apple, peeled and finely chopped
- Preheat the oven to 400u0b0.
- Coat a 12-cup muffin tin with vegetable cooking spray or line with paper muffin cups.
- In a large bowl, combine the dry ingredients.
- In a separate bowl, whisk the eggs with the buttermilk, honey and oil.
- Add the mixture to the dry ingredients.
- Add the apple and stir until just combined, but not overmixed.
- Fill the prepared muffin cups 3/4 full and bake for about 15 minutes or until golden.
- Remove the muffins from the pan. Allow to cool slightly and serve warm.
- Makes 18 large muffins.
