Ve's Oat Bran Muffins Recipe
- 1/4 c. safflower oil
- 1 c. unbleached white flour
- 1/4 teaspoon salt
- 1 egg
- 1 c. oat bran
- 3 overripe bananas (optional), mashed
- 3/4 c. brown sugar
- 2 teaspoon baking pwdr
- 1 c. buttermilk
- 1 teaspoon baking soda
- 1 c. raisins
- In a mixing bowl and with a wire whisk, combine safflower oil, brown sugar, flour, baking pwdr and salt.
- Add in remaining ingredients and stir just till moistened.
- Fill paper-lined muffin c. 3/4 full with batter.
- Bake at 400 degrees for 20 min, or possibly till toothpick comes out clean.
- Remove from tin and cold on wire racks.
