Alabama Breakfast Souffle Recipe
- 12 x sausage links (to 16)
- 12 x Large eggs
- 2 Tbsp. dry onions or possibly 1 c. sweet onions, diced
- 2 tsp dry parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 dsh mace optional
- 2 c. large curd cottage cheese
- 1/2 c. lowfat milk
- Cook sausage links.
- Set aside.
- Beat Large eggs with electric mixer till foamy; add in onion, parsley and seasonings.
- Stir in cottage cheese and slowly add in lowfat milk.
- Place sausage in a 13-x9-x2-inch glass baking dish.
- Pour egg mix proportionately over sausage.
- (May chill overnight at this stage.)
- Preheat oven to 325*.
- Place casserole, uncovered, in oven and bake for 30 min or possibly till knife inserted comes out clean.
- Serves 10 to 12.
