Aunt Joann's Delicious Mayo Cake

  1. Preheat oven to 350F (325F if using a glass dish).
  2. Grease a rectangular cake pan.
  3. If you use a pan where you want to remove the cake before serving (like a bundt pan or 2 round pans), be sure to flour the pan as well as grease it.
  4. Mix the sugar and cocoa in a large bowl.
  5. Add mayonaise and vanilla and beat until combined.
  6. Alternate 1/2 of the water and 1/2 of the flour, beating well after each addition.
  7. Add baking soda last and whip on high to make batter fluffy.
  8. Pour into prepared pan and bake approximately 30 minutes.
