Aunt Joann's Delicious Mayo Cake
- 1 cup sugar
- 1 cup mayonaise
- 5 tbsp. cocoa
- 1 cup warm water
- 1 tsp. vanilla
- 2 cups all-purpose flour
- 2 tsp. baking soda
- Preheat oven to 350F (325F if using a glass dish).
- Grease a rectangular cake pan.
- If you use a pan where you want to remove the cake before serving (like a bundt pan or 2 round pans), be sure to flour the pan as well as grease it.
- Mix the sugar and cocoa in a large bowl.
- Add mayonaise and vanilla and beat until combined.
- Alternate 1/2 of the water and 1/2 of the flour, beating well after each addition.
- Add baking soda last and whip on high to make batter fluffy.
- Pour into prepared pan and bake approximately 30 minutes.
