Healthy Raisin-Walnut Waldorf Salad

  1. In a bowl, combine raisins and boiling water.
  2. let stand for 5 minutes, drain.
  3. combine raisins, apples, celery and lemon juice; toss.
  4. Combin yogurt, pudding mix, and sweetener if desired.
  5. Pour over apple mixture; toss to coat.
  6. Cover and refrigerate for 1 hour.
  7. Just before serving, stir in walnuts.
