Scalloped Spinach With Potatoes Recipe
- 1 pound fresh spinach, washed & minced
- Or possibly 10 ounce. frzn spinach, liquid removed & squeezed dry
- 4-6 med. potatoes washed & thinly sliced
- 1/4 c. butter, melted
- Reserve 1 1/2 c. potatoes and combine the remainder with the spinach.
- Butter a 2 qt casserole with part of the butter and add in remaining butter to potato-spinach mix.
- Separately combine: 1/4 c. lowfat milk 1 teaspoon salt 1/4 teaspoon nutmeg 1/4 teaspoon cayenne 2 tbsp.
- chopped onion 1/4 c. grated Cheddar
- Add in this to potato - spinach mix and pour it all into the buttered baking dish.
- Cover proportionately with reserved potatoes and cover the casserole.
- Bake at 350 degrees for 50-60 min or possibly till potatoes are tender.
- Top with 1/4 c. grated cheese.
- Bake an additional 10 min and serve.
