Irish Whiskey Pie

  1. Combine gelatin,1 T sugar and salt in saucepan.
  2. Beat egg yolks,cream and whiskey into gelatin mixture.
  3. Cook over low heat,stirring constantly until mixture thickens slightly.
  4. Stir in mint jelly.
  5. Chill until mixture begins to thicken.
  6. Beat egg whites into soft peaks and beat in remaining sugar until mixture forms stiff peaks.
  7. Fold into chilled mixture,add whipped topping and food coloring,turn into pie crust.
  8. Garnish with remaining topping and refrigerate until firm.
  9. Let stand at room temp for 2 hours before cutting.
