Healthful Beef Stew
- 2 lb. lean chuck, cubed
- 1/4 c. flour
- 2 Tbsp. oil
- 1 c. chopped onion
- 2 cloves garlic, minced
- 2/3 c. diced celery
- 1/4 c. chopped parsley
- 1/2 tsp. rosemary
- 1/4 tsp. thyme
- 1/2 tsp. black pepper
- 1/4 tsp. oregano
- 1/2 c. dry wine
- 1 c. water
- 2 c. tomatoes, chopped
- 4 medium potatoes
- 4 c. diced carrots
- Coat beef with flour and brown in oil in large container.
- Add onion and garlic and cook until softened.
- Pour off excess fat. Add celery, spices, water and wine and bring to boil.
- Reduce heat, cover and simmer 1 hour.
- Add tomatoes, potatoes and carrots.
- Simmer 45 minutes or until vegetables are tender.
- Makes 8 servings.
