Guinness-Ginger Spice Cake
- 12 cup dark raisin
- 12 cup dried cherries
- 12 cup golden raisin
- 12 cup crystallized ginger
- 2 cups Guinness stout
- 12 cup butter
- 1 cup brown sugar
- 3 eggs, beaten
- 2 14 cups flour
- 3 teaspoons baking powder
- 34 teaspoon salt
- 12 teaspoon ground cinnamon
- 14 teaspoon ginger
- 18 teaspoon nutmeg
- 18 teaspoon ground cloves
- 18 teaspoon ground allspice
- 18 teaspoon ground cardamom
- Place dried fruit in a bowl and cover with Guinness.
- Allow to soak overnight.
- Preheat oven to 350F In a large mixing bowl, cream the butter and sugar together until smooth, then beat in the eggs one at a time.
- Strain fruit, reserving the Guinness separately.
- Add flour, baking powder, salt, spices, and drained fruit to butter and sugar mixture.
- Add enough fresh Guinness to the drained stout to measure 8 fluid ounces and add to batter, mixing thoroughly to combine.
- Grease an 8-inch cake pan and add batter, smoothing top evenly.
- Bake in preheated oven for about 40 minutes, until the center is firm.
- Serves 8.
