Mexican Sweet Pork
- 4 pounds Pork Roast Bone-In
- 1 bottle Red Taco Sauce In A Jar
- 20 ounces, fluid Cola
- 1- 1/2 cup Brown Sugar
- 2 Tablespoons Cumin
- 1 teaspoon Cayenne Pepper
- Place pork roast in a crock pot and cover half way up with water.
- Cook overnight on low.
- You can cut the time but it will not be as tender and soak up the sauce as well.
- Take pork out of crock pot and shred.
- Discard the water that is left and mix remaining ingredients in the crock pot.
- Place shredded Pork back in the crock pot with sauce.
- Stir to cover and cook an addition 2 hours.
- This also can be cut in half if you do not have the time, it just wont have as much flavor.
- After the two hours, serve how you wish.
- Our favorite way is to make lime-cilantro rice, and black beans and serve burrito style with all the toppings.
