AMIEs PASTA with SQUASH & BACON

  1. Bring a large pot of water to the boil.
  2. Add a tablespoon of salt.
  3. Cook the pasta according to the packet directions or until al dente.
  4. Drain and return to the pan.
  5. Meanwhile, heat the oil in a large frying pan over medium heat.
  6. Add onion and saute until softened.
  7. Add the squash cubes and saute for a further 5 minutes.
  8. Season with salt and pepper.
  9. Mix the bacon and sugar and cook for another 5 minutes, until becomes golden brown.
  10. Put the cooked pasta in the pan with sauce.
  11. Add the mozzarella and provolone cheese.
  12. Stir well to combine.
  13. Add 2 or 3 tablespoon of pasta water.
  14. Scattered parsley and toss to coat.
  15. Serve hot from the pan.
  16. Share and enjoy.
  17. note: Don't overcook the squash.
